It seems like during the summer things move a little slower…maybe that’s why they call them the lazy days of summer! Are you hosting this month (or anytime during the summer)? If so, there are so many themes to choose from during the summer that it’s hard to choose one. Sometimes in my group, we use 3 different sets, 1 per table…it’s a fun way to mix things up!
Unlike all those months with the obvious holidays to theme around, summer is wide open! You could pick Butterflies, Summer Day, Dog Days, Roses, Glorious Golf, Grand Slam Baseball, or Garden…and that’s just a few of the options! Warmth, relaxed fun is a common thread with these themes. If you’re hosting and want to go with, let’s say, the Garden theme, you could have a gnome stress toy as a traveler, place flowers on the tables, use potted flowers, bouquets, or gardening tools as prizes. The possibilities are vast!
The recipe (below) is for Fruit Pizza which ties in great with any summer theme! This dessert has a sugar cookie type crust, sweet cream cheese layer, yummy fruit and topped with a fruit glaze. I’m not sure where I got this recipe as I’ve been making it for years. It’s a really nice fresh dessert to share with Bunco friends or family.
Fruit Pizza with Glaze
INGREDIENTS
1 cup butter
1/2 cup powdered sugar
2 cups flour
1-8 ounce cream cheese
1/3 cup powdered sugar
1 teaspoon vanilla extract
3/4 cup sugar
1 1/2 teaspoon lemon juice
1 1/2 cups juice from canned fruit
3 tablespoon cornstarch
DIRECTIONS
Preheat oven to 350°F. Mix first 3 ingredients well, pat into jellyroll pan (12″ x 17″ x 1″). Bake for 10 minutes.
Cream next 3 ingredients together. When the crust is cool, spread mixture over the crust.
Mix last 4 ingredients (mix sugar and cornstarch first) and thicken on the stove and cool. Arrange desired fruit on top. When glaze is cooled, spread evenly over pizza and chill. Cut and serve.
Fruit suggestions: Pineapple chunks, Mandarin oranges, Strawberries, Kiwi, Peaches, Grapes, Raspberries, Blueberries…or whatever you like! ENJOY!
